Andorra. A place I had heard of before but would never be able to find on a map. A little tiny speck on the border between France and Spain, it’s officially a Principality and yet is still a UN Member Nation, thus it‘s on our list. It’s 180 square miles large, and only has a population of 77,000. Needless to say, it was hard to find a dish that is purely Andorran, but escudella is considered the national dish.

What was scooped out of the pot and considered inedible by our Canadian standards (bones, skin and fat)

Escudella was our first foray into "weird" food. Bones, parts of the pig we never thought we'd eat, and chicken feet. In the end we decided against using chicken feet - this may or may not have been due to a lack of easy availability :-)

We decided to call this version of escudella "Scrap Soup". The list of ingredients was really long, and it seemed to be largely things that may have been leftover from previous meals. All the weirdness and seemingly random bits resulted in a very rich (albeit fatty) and very tasty soup. Ruth and Jack both give it 9/10 and the tiny country of Andorra has surpassed Afghanistan as the household favourite. Next up is Angola!
