#33 - Chad

When we started researching food in Chad we were seeing a lot of familiar words - maize, cassava, millet... but we also were happy to see that lamb and chicken figure prominently in the Chadian diet. And so that's what we went with. Not that we totally abandoned unusual grains (cassava flour was used!), but we felt it was time to go with a more "upscale" African meal.

It turns out that upscale in Chad is a (almost) typical meal for us. We had roast chicken (cooked slightly differently, but essentially the same as we would usually have). There was zucchini on the side (mashed, with peanuts!) which isn't our usual veggie of choice, and then there were the cassava flour honey buns (aka glue balls), so it wasn't a totally familiar meal.

Oh yeah, there was also the pineapple spiced milk (spiced with cardamom & nutmeg) which was the highlight of the whole thing and something that we'll probably make again! All in all, the food we chose to make from Chad was easy and comfortable.

This was the first time that Apple Music let us down. Andrew couldn't find any music from Chad to listen to while we ate. Ruth was in charge of fun facts this week and we learned about camel races, political corruption, lack of clean water and most interestingly (to me, at least) that there is only 1 physician per 23,000 people - and we think we have a primary care crisis in BC!
