#15 - Barbados

We're back at it! The national dish of Barbados is CooCoo and Flying Fish. Luckily the recipe very clearly stated that if you're not in Barbados when making it, to substitute tilapia for flying fish! This made life easier right out of the gate. Finding flying fish was not going to be easy.

The fish itself was super tasty. It was sitting in lime juice and salt for about 15 minutes, then was coated in onions, celery, fresh thyme and oregano before being breaded and fried. Granted it's not the healthiest way to eat fish, but it was really really good, so I'm not making any apologies (and neither should the Barbadians).

Coo Coo - and yes, that's a puddle of butter in the middle of it. I'm not really sure what the butter added (other than greasy calories), but we do what we're told when following these recipes!
