While this isn't the "national dish" of Belize, we all decided we were getting pretty tired of rice. So Andrew decided to make Chirmole instead. Chirmole is a "classic Belize dish" (which is close enough to a national dish to get an a-ok for this project in my book). It's essentially a chicken soup with squash, tomatoes and egg (yes, that's a whole hard boiled egg in the bowl). It was a bit bland, but overall pretty good!
Belize was a densely populated area along the major trade route for the Mayans, and over half the population today identify as Mestizo (a people of mixed Spanish and Mayan descent). It is the only country in Central America with English as the official language, and was a British territory until 1981.

The recipe Andrew found for Chirmole is interesting in that it describes the dish being typically served with corn tortillas and a "cold glass of Coke". I don't imagine the Mayans intended that....
